  1. Start water to boil in a large pot on the side.
  2. Dice four strips of bacon and toss in a skillet.
  3. Remove bacon when it is partially cooked (still pink and slightly raw).
  4. Dress shrimp with flour then add to skillet. Roll around until they get a little color, just enough to brown.
  5. Remove some of the grease.
  6. Sauté bell pepper and onion, then add partially cooked shrimp and bacon.
  7. Add a little bit of the boiling water, not even enough to cover.
  8. Flour on the shrimp will make the gravy thick and adds color. Add water as needed.
  9. Put top on, let it go for 15 minutes or more, then check shrimp.
  10. Serve over grits or rice. Quantities easily adjusted to number of people eating.
